LEMON SHORTBREAD

These lemon shortbread cookies are crispy, buttery and flavored with zesty lemon. They are easy to make and need just four ingredients.

Easy Recipe

Cream butter and sugar until very creamy and light, then add flour, lemon juice and zest, mixing until a dough forms.

Roll the dough into a ¼ inch thick large rectangle and refrigerate until firm. Then working quickly, use a round cookie cutter to cut the dough.

Next, place the cut out cookies on a prepared baking sheet and bake until they turn a light golden brown around the edges.

Dust with powdered sugar before serving.

Recipe Notes

Don't add more than 1 tbsp of lemon juice because the cookie dough will be too soft and will spread too much.

Love this cookie, velvety lemony yummy. Made one batch to test. I ate half the cookies this morning just to be sure I loved them. Making a double batch for gifts.
