This magic cake is very unique. It only requires 4 ingredients but when the cake bakes, it separates into three different layers. There is a light sponge cake on top, a creamy filling in the middle, and a firm flan layer on the bottom.
Mix egg yolks, flour, sugar and only 1/2 cup of milk. Beat until smooth and no lumps remain. Once smooth, add in remaining milk . Reduce speed and mix until incorporated.
In a separate bowl, add egg whites. Beat until stiff peaks form.Gently stir and fold in 1/3 of the egg whites at a time into the batter with a spatula.
Pour into the prepared cake pan. Bake about 40-50min, or until done.Let cool before cutting. It will deflate a little around the sides. That is normal.
Can be served the same day or the next. If serving the same day, let sit for 1-2hrs before serving. If serving the next day, store cake in fridge overnight. Dust with powdered sugar, if desired.
