LEMON  CRAZY CAKE

(NO EGGS, BUTTER OR MILK)

This easy lemon-flavored cake is soft, fluffy and moist. It doesn't require any eggs, butter or milk and takes only about 15 minutes to prepare.

Easy Recipe

Preheat the oven to 350°F (177°C).  Line an 8 x 8-inch baking pan with parchment paper.

Whisk self-rising flour & sugar until evenly combined.  Sift the mixture by moving the whisk rapidly back and forth through the flour until it looks light and powdery.

Add in oil, lemon juice and half of the water. Whisk until your batter is smooth.  Then add in remaining water and whisk again. Stir in lemon zest.

Pour batter into baking pan. Bake for about 35-38 min.  Let the cake cool completely in the pan before removing and cutting.  Frost cake after it has cooled. ENJOY!

* You will need approximately one large lemon for this recipe

Recipe Notes

* If you want even more lemon flavor, you can add another 1 tbsp of lemon juice or another 1 tsp of lemon zest.

* DIY self-rising flour: Whisk 1 3/4c all purpose flour, 2 5/8 t baking powder & 7/16 t salt until evenly combined.
