This 2-Ingredient Chocolate Mousse is an easy, no-bake dessert that comes together in minutes. It doesn't require any dairy, cream, eggs or butter and includes a hidden healthy high protein ingredient that you won't taste at all. It chills into a velvety, light mousse with a smooth, melt-in-your-mouth texture and rich chocolate flavor. Serve with fresh berries, whipped cream, shaved chocolate, or a sprinkle of flaky salt.
1(16 oz/454g) packagesilken tofu, excess liquid drained off
Instructions
Add the chocolate chips to a microwave-safe bowl and melt in the microwave in 30-second intervals, stirring between each, until smooth and fully melted. Alternatively, you can melt the chocolate on the stove using the double boiler method. Let cool slightly for a few minutes so it is warm but not hot.
Add the drained silken tofu and melted chocolate to a high powered blender.
Blend until completely smooth, glossy, and uniform, scraping down the sides as needed, about 30–60 seconds total blending time.
Scoop the mousse into small ramekins or serving bowls. Refrigerate for at least 1 hour, or until chilled and set. You can garnish with fresh fruit, whipped cream, chocolate shavings or other toppings.
Store any leftover mousse in an airtight container in the fridge.
Notes
Chocolate note: This recipe works best with dark chocolate with around 60% cocoa. You can use higher percentage and the mousse will be more firm. You can use lower percentage cocoa but the mousse will be less set. If you need the mousse to be dairy-free, make sure to use dairy-free chocolate chips.
