2tbsp (1 oz)ChocZero sugar free maple flavored syrup
Instructions
Preheat oven to 350°F. Line a large baking sheet with parchment paper.
In a medium bowl, stir together almond butter and syrup with a spatula. At first your batter will be very liquidy, but as you continue to mix, the dough will thicken. Stir until the dough has pulled away from the sides of the bowl and formed a dough ball.
Use a tablespoon to measure out 1 tbsp of dough. Roll between your hands and place onto prepared baking sheet. Repeat with remaining dough, spacing dough balls 2 inches apart.
Press down on dough balls with the palm of your hand to form thick round disks. Try not to flatten dough balls too much because the cookies hold together better when the cookies are thick. If desired, use a fork to make criss-cross pattern.
Bake cookies for about 10 minutes, or until they are puffed up and the surface looks dry. Let cookies cool before attempting to remove them. If you remove them before they are set, they will break.
Notes
This recipe will only work with natural almond butter (only almonds in the ingredient list). Make sure to use a newer jar of almond butter. If your almond butter is no longer drippy, then it is too dry for this recipe to work. This recipe will also work with natural peanut butter, but I would increase the syrup to 3 tbsp.
These cookies are not supposed to be super sweet. I like to sprinkle a little salt on top which adds some more flavor and also enhances the mild sweetness.
This recipe works best with ChocZero sugar free maple syrup.* ChocZero has a thick, honey-like syrup which helps bind the cookies better. This recipe does work with Lakanto maple syrup which has a more watery texture, but the cookies came out more crumbly and less sweet. If you are not on a keto diet, this recipe also works with pure maple syrup.
