These brownies don't require any baking! They are so rich and fudgy and will satisfy your chocolate cravings. They also don't contain any flour, eggs, or oil.
Line an 8 x 4 inch baking pan with parchment paper. Add chocolate to a large mixing bowl and melt chocolate in the microwave or on the stove using the double boiler method. If using microwave, first heat at full power for 1 minute. Stir the chocolate with spatula. If it is not hot enough to completely melt all the chocolate, microwave the chocolate again for another 30 seconds. Stir until smooth.
Working quickly, fold in the puree. Use your spatula to scrape the chocolate from the bottom of the bowl, moving it up and over the puree. Continue to fold until banana is completely incorporated into the chocolate and the mixture is uniform in color. Because the chocolate tends to stick to the bottom and sides of the bowl, you do want to make sure to scrape the bowl several times when folding in the banana puree.
Pour mixture into prepared baking pan. Place into fridge for 30-60 minutes or until set. Remove and cut into squares with a sharp knife. Store any uneaten brownies in the fridge.
Notes
When melting chocolate in the microwave, you don't want to overcook it. After the first minute, only heat in 30 second intervals as needed until chocolate is completely melted and smooth.
This recipe will only work with dairy-free chocolate. Look at the ingredient list and make sure milk or milkfat is not listed as an ingredient. Chocolate that contains milk will not set. For example, Nestle chocolate chips contain milk and will not work. This recipe will also not work with white chocolate. I used Kirkland semisweet chocolate chips (this is the Costco brand). Costco actually has two versions of Kirkland semisweet chocolate chips. The white bag is the one that does not contain milk.
These brownies do not have a classic brownie crumb. See post for details on what to expect for the brownie texture.
Use ripe or very ripe bananas. Very ripe bananas will be easier to puree. You can puree in a food processor or blender. This recipe will not work with previously frozen bananas.
The banana puree is what prevents the chocolate from solidifying again which is why you need to make sure it is completely incorporated into the chocolate.
The recipe will work a 9 x 5 inch pan but the brownies will be very thin. You can also double the recipe and pour the batter into an 8 x 8 inch pan (or 9 x 9 but your brownies will be thinner).
