In a large bowl combine coconut and condensed milk. Stir until you have a sticky dough. When you pinch some of the mixture, it should hold its form. If your dough is too crumbly, mix in a little more condensed milk. If it is too wet or sticky, add more coconut.
Use a 1.5 tablespoon cookie scoop and pack the dough into the scoop. Release into your palm and use your hands and fingers to pinch and shape the dough until it forms a round ball. I found that the dough did not do well rolling to form a ball but I was able to pinch and shape into it into balls. Place ball onto your prepared sheet pan and repeat with the remaining dough.
Add 2 tablespoons of coconut into a small bowl. Roll each ball in the coconut until it is coated. Place balls back onto the sheet pan. Place coconut truffles into the fridge to firm them up (mine took less than 30 minutes). Store uneaten truffles in the fridge.

Shredded Coconut Note: Use very finely shredded coconut, about the size of small crumbs. My favorite brand to use is Let's Do Organic Unsweetened Shredded Coconut (Amazon | Target).* I've also made these with Bob's Red Mill Unsweetened Shredded Coconut (Amazon | Walmart)* which is also very fine though not as fine as Let's Do Organic brand.
I used Nature's Charm sugar-free coconut condensed milk.* You can also use sugar-free sweetened condensed dairy milk but the amount needed to form the dough will be different. If you can't find sugar-free coconut condensed milk, you can also make your own. Unfortunately, I don't have a recipe at this time but there are many other recipes available on the internet.

The amount of condensed milk needed will vary a little depending on the size of your shredded coconut.
The coconut balls are lightly sweetened. If you prefer sweeter desserts you can dip the balls in melted chocolate or powdered sweetener instead of coating them in more coconut.
If you are on a keto diet, please remember to look at net carbs and not just total carbs in the estimated nutrition. The net carbs count excludes fiber and carbs from sugar alcohols.
