2 ¼cupsself-rising flour, (see note for making your own)
Instructions
Preheat oven to 350°F. Grease or line the interior of an 8 inch x 4 inch loaf pan.
Add ice cream to a large mixing bowl. Let ice cream melt and come to room temperature. You can also soften it for a few second in the microwave to speed up the melting process. Stir in the flour until thoroughly combined. Your batter should be thick.
Pour into prepared baking pan. Bake for about 60-65 minutes, or until toothpick inserted comes out clean. Let bread cool fully before slicing and serving.
Notes
Please make sure to use full fat ice cream as the recipe relies on the ingredients used to make the ice cream for the recipe.
Try to choose a strong flavored ice cream like chocolate or caramel. If you choose a more subtle flavor, your bread will come out more plain.
When measuring the 3 cups of ice cream, scoop out unmelted ice cream and pack it into the measuring cup.
If you don't have self rising flour, mix together 2 1/4 cup all purpose flour, 3 tsp baking powder and 3/4 tsp salt
