This yogurt fudge has a rich, creamy, smooth texture. It only needs 2 ingredients and you don't need any butter, oil or a candy thermometer to make it. The fudge takes just minutes to prepare.
3/4cup (179g)plain whole milk yogurt, brought to room temperature (about 30 minutes)
2cups (310g)dark chocolate chips, around 60% cocoa, see note before starting
Instructions
Line a 8 x 4-inch loaf pan with parchment paper, leaving a little overhang for easy removal later.
Add the chocolate chips to a microwave-safe bowl and heat in 30-second intervals, stirring between each with a silicone spatula, until chocolate is fully melted and smooth.
Add the room temperature yogurt to the chocolate. Make sure the yogurt is not cold when you add it, otherwise it will cause the chocolate to seize. Stir with a spatula until the yogurt is fully and evenly incorporated and no yogurt streaks remain. The mixture should be uniform in color.
Transfer the mixture into your prepared loaf pan. Use your spatula to smooth and even the surface. You can also make a pattern on the surface for decoration if desired. Refrigerate the fudge for a few hours or overnight to allow the fudge to set. The fudge is ready when it feels firm to the touch.
Cut fudge with a large sharp knife. The fudge can crumble a little as you cut it because it gets stuck on the knife. After each cut, rather than lifting the knife off the fudge or pulling it off, slide the fudge across the length of the knife blade until it slides off the knife blade. This keeps the fudge pieces smooth and intact. If desired, you can garnish the fudge with some coarse salt before serving. Store any uneaten fudge in an airtight container in the fridge. Refrigerated fudge should be able to be stored for around 3 days.
Notes
Chocolate note: This fudge is made with dark chocolate chips that contain around 60% cocoa. Avoid using chocolate that doesn't contain lecithin (such as Enjoy Life brand). Lecithin helps the chocolate stay smooth and the fudge stay creamy.
Yogurt note: This recipe uses regular yogurt, not Greek yogurt. I used plain unsweetened yogurt to keep the fudge healthier. If you want the fudge to be sweeter you can use sweetened yogurt like vanilla yogurt.
