These cottage cheese bread buns are just 3 ingredients and easy to make. They are a great low carb and keto-friendly bread alternative which can be used to make sandwiches, burgers and more.
Preheat your oven to 375°F (191°C). Line a baking tray with parchment paper.
Add almond flour and baking powder. Whisk until baking powder is evenly mixed in. Add in cottage cheese. Mix until you have a sticky dough.
Divide the dough into 6 equal portions and roll each portion into a ball. Flatten and shape each ball on the prepared baking sheet, until they are about 3 ½ inch wide rounds. The bread buns don’t spread too much during baking, so make sure to smooth the edges to make them look nice and round like bread buns before baking. If you are adding toppings like sesame seeds, sprinkle them on now.
Bake breads for about 25-30 minutes or until the bread buns are golden brown on top.
Remove the breads from the oven and let them cool slightly before serving.
Notes
This recipe makes 6 bread buns. You will need 2 bread buns to make a closed sandwich. The bread buns are not meant to be sliced/cut in half because they are not that thick.
You can add sesame seeds or bagel seasoning as garnish. It is completely optional. The breads are already lightly seasoned from the cottage cheese.
The recipe should work with both low fat or whole milk cottage cheese.
Make sure to use superfine blanched almond flour. I use Kirkland brand sold at Costco.
