This easy yogurt bark is a healthier alternative to traditional candy bark. Lightly sweet, creamy and topped with whatever fruit you prefer. You only need 3 ingredients to make this bark.
1cup (about 160g)mixed fruit, such as blueberries, chopped strawberries, kiwi
Instructions
Line a small baking sheet (such as a 12 x 9 inch) with parchment paper. In a medium bowl, mix together yogurt and maple syrup until the maple syrup is fully incorporated. Start with 2 tbsp and add more as needed to taste.
Add yogurt mixture onto the lined baking sheet and spread out into an even layer, between ¼ inch and ½ inch thick.
Optional chocolate step: If adding chocolate, melt 1/4 cup dark chocolate chips in the microwave or using double boiler method on stove until it is smooth and fully melted. Add dollops of chocolate and swirl with the yogurt. You don’t need to use all of the chocolate.
Top with fresh fruit, spreading them evenly across and pressing lightly down to make sure some of the fruit is in the yogurt so the fruit doesn’t roll off when you freeze it.
Place bark in the freezer until the yogurt is firm, about 3 to 4 hours.
Use a large knife to cut bark into pieces. Bark should be eaten soon after it is removed from the freezer or it will start to melt. Store leftover bark in an airtight container in the freezer.
Notes
This recipe works best with whole milk Greek yogurt for a creamier bark, but you can use low fat Greek yogurt.
