Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
Add cheese and almond flour into a food processor and pulse until the cheese begins to stick to the almond flour and forms large crumbs. Add 1 tbsp water and pulse again. When you squeeze the crumbs between your hands, they should stick together like dough. If your dough is too crumbly, add another 1 tbsp of water and pulse again.
Roll dough out between two sheets of parchment paper until it is between 1/8 to 1/4 inch thick. The thinner your dough is the crunchier the crackers will be. If your dough is thicker, the crackers will be puffier and less crunchy. I cut my crackers into 1/2-inch by 3/4 inch rectangles but you can choose other shapes or make them bigger or smaller. Place crackers onto baking sheet, making sure none of them touch.
Bake crackers for 10 minutes. Remove baking sheet from oven briefly and flip crackers over. Place baking sheet back into the oven and bake crackers an additional 5-10 minutes or until crackers are browned and the tops feel firm and crunchy to the touch. Let crackers cool before eating.

I have only tested this recipe using fresh parmesan cheese and not the shelf-stable kind.
