These almond oatmeal cookies don't require any cooking or baking. They are just 3 ingredients and don't require any flour, eggs, refined sugar, dairy, butter or oil.
1/2cup (128g)natural almond butter with no added oils
1/2cup (45g)quick oats, or more as needed
Instructions
Line a large cookie sheet with parchment paper. Add dates to a food processor and blend until a mostly smooth paste forms. You will need to scrape the sides of your food processor a few times with a spatula to help the processor mix and blend. If your dates are a little old or dry, rehydrate them before using. See notes for more details.
Add in almond butter and oats. Blend until a thick dough forms. The dough should stick together but should not feel too sticky to roll or work with. If the dough is too sticky, add more oats, 1 tbsp at a time, and blend again. If your dough is too crumbly you can also add a little more peanut butter or a splash of water to make the dough more moist.
Using a 1.5 tbsp cookie scoop to portion the dough. Release each dough ball onto the prepared cookie sheet. Press down each dough ball with the palm of your hand until it forms a smooth round disk, about 1/2 inch thick. This will be the final shape of your cookie, so smooth the edges and reshape as needed.
You can eat the cookies right away but I like to place them in the fridge for about 30-60 minutes to help them firm up further. Once chilled, the cookies are ready to serve. Store any uneaten cookies in an airtight container in the fridge.
Notes
Dates note: If you are using an older package of dates or your dates seem dry, you will need to rehydrate the dates. To rehydrate them, soak them in warm water for 10-15 minutes. Then drain out the water and thoroughly pat dry the dates with paper towels. Make sure all the excess water is removed, otherwise your cookie dough will be too sticky. Then add dates to the food processor and blend until smooth.
Make sure to use natural almond butter with no added oils. The dough will not set if you use almond butter with added oils.
The amount of oats needed will vary depending on how moist your dates are and the consistency of the almond butter.
