These strawberry oatmeal cookies are soft, chewy and easy to customize. They need just 3 ingredients and don't require any flour, eggs, refined sugar, dairy, butter or oil.
1/2cup (107g)strawberry puree + 1/4 cup (44g) finely chopped strawberries (between 1/8 to 1/4 inch cubes), see note before starting
2tbsp (30ml)honey, or more to taste
1cup (92g)quick oats
Instructions
Preheat oven to 350°F (175°C). Line a large cookie sheet with parchment paper.
Add strawberry puree and honey to a large mixing bowl. Whisk until the honey is fully incorporated.
Add in oats. Stir with a spatula until the oats are evenly mixed and fully coated. Taste, and if needed, you can stir in more honey. If adding optional peanut butter, stir it in now. Stir in chopped strawberries and any other optional mix-ins. Mix until they are evenly distributed.
Use a 1.5 tbsp cookie scoop to scoop out cookie mixture. Release cookie mixture onto the prepared baking sheet, spacing the dough balls about 1.5 inches apart. Use the back of a metal spoon to press down on each cookie dough ball so that it forms a thick round disk, between 1/4 to 1/2 inch thick. Smooth the sides of the cookie disks if desired. The cookies will not spread during baking so you want to shape the cookies to how you want the final outcome to be.
Bake cookies for about 12-14 minutes or until cookies are set and no longer look wet. When cookies are done, they should not stick to the prepared baking sheet. Let cookies cool completely before removing them from the baking sheet with a cookie spatula.
Notes
Strawberry note: To make strawberry puree, blend hulled strawberries in a small blender until smooth. Measure out 1/2 cup of puree for the recipe. For the finely chopped strawberries, make sure to keep the pieces to approximately 1/8 to 1/4 inch. You do not want the strawberry pieces to be bigger than 1/4 inch because they will cause too much moisture in the cookies and will cause the cookies to fall apart. I also don't recommend adding more than 1/4 cup of chopped berries because that will also cause the cookies to fall apart and be too wet.
The cookies are meant to be healthier cookies so they are not as rich as regular cookies. You can add some richness by adding 2-4 tbsp peanut butter or almond butter which will add some healthy fat to the cookies but it will take away some of the strawberry flavor.
To make the cookies sweeter, you can add more honey or add sweet mix-ins like chocolate chips.
