Soft, tender, moist biscuits that are packed with garlic and cheese flavor. These are like garlic bread flavored biscuits. The biscuits need just 4 ingredients and are low carb and keto-friendly.
1cup (212 g)4 % milkfat cottage cheese, small curds, can substitute with low fat cottage cheese
4tbsp (54 g)garlic butter, melted
Instructions
Preheat oven to 350°F (177°C). Grease 9 cavities of a standard 12-cup muffin pan.
In a large bowl, combine almond flour and baking powder. Whisk until evenly combined.
Add in cottage cheese and melted garlic butter. Use a spatula to mix until the cheese and garlic butter are completely incorporated.
Using an ice cream scoop (with about 1/4 cup capacity), scoop and release the biscuit mixture into your prepared muffin pan.
Bake for about 20-25 minutes (mine took about 23 minutes) or until biscuits are golden brown on top and cooked. Let the biscuits cool slightly before serving. If desired, you can brush more melted garlic butter on top before serving and/or garnish with finely chopped parsley.
Notes
Make sure to use small curds cottage cheese so that the curds melt as the biscuits bake. I used Good Culture 4% milkfat cottage cheese (Amazon | Target)* You can substitute with low fat cottage cheese.
I used Kerrygold Garlic and Herb butter (Amazon | Walmart)*. If you are unable to find garlic butter at the store, you can also substitute with regular unsalted butter and add 1 tsp garlic powder and 1/4 tsp salt to the recipe.

Because this recipe requires a high amount of baking powder, we recommend using aluminum free baking powder to eliminate any potential metallic aftertaste. We use Whole Foods 365 aluminum free baking powder.
Make sure you use a superfine almond flour. We used Kirkland superfine almond flour (sold at Costco).
