1/2cup (4 fl oz/118ml)egg whites, either carton liquid egg whites or egg whites from about 4-6 eggs
1/4cup (26g)flaxseed meal
6tbsp (55g)sesame seeds, can substitute 1-2 tbsp with other seeds, see note
1tspgarlic powder
Instructions
Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper.
Pour the egg whites into a clean mixing bowl. Using a hand mixer or stand mixer fitted with the whisk attachment, beat on medium-high speed until medium peaks form.
Sprinkle in the flax meal, sesame seeds, garlic powder and any other seeds you are adding. If you want to add salt, add about 1/2 tsp salt as well at this time. Using a spatula, gently fold everything together just until evenly combined, being careful not to knock all the air out of the whipped egg whites.
Drop about 1 tbsp of the mixture onto the prepared baking sheet for each mound, leaving about 2 inches between each mound. Firmly tap the baking sheet on the counter a few times to naturally flatten and spread the mounds into thin rounds. For any rounds that have not spread, use the back of a metal spoon to flatten them.
Bake for 20 to 25 minutes, or until the crackers are crispy and golden brown.
Let the crackers cool completely on the baking sheet before serving or storing. They'll continue to crisp as they cool. The crackers can be enjoyed right away. Uneaten crackers should be stored in an airtight container in the fridge or freezer. These crackers are high in fiber so we don't recommend consuming more than a few a day.
Notes
Seed note: This recipe does need 1/4 cup flaxseed meal. This is not optional. For the sesame seeds, you can replace 1-2 tbsp of the sesame seeds with another small seed like chia or poppy seeds.
