2tbsp (1 fl oz/30ml)lemon juice + 1/2 tsp lemon zest
5tbsp (2.5 fl oz/74ml)sugar-free maple flavored syrup
1cup (149g)sugar-free white chocolate chips
Instructions
Add almond flour, lemon juice, zest and syrup to a large mixing bowl. Mix until everything is evenly combined. You should have a thick soft dough. If the dough seems to wet, add a little more almond flour. If it's too dry, add a little more syrup. You can also add more syrup to taste.
Place the dough between two sheets of parchment paper. Use a rolling pin to roll the dough into a rough rectangle, between 1/4 inch to 1/2 inch thick. My rectangle was around 9 x 7 inches. Peel off the top layer of parchment paper.
In a microwave-safe bowl, add white chocolate chips. Microwave in 20-second intervals, stirring in between each interval with a silicone spatula, until the chocolate is completely melted and smooth.
Spread the melted chocolate over the cake layer with an offset spatula. Place the bark into the fridge until the chocolate is set. Once set, cut the bark with a sharp knife or break into smaller pieces. If desired, you can garnish the bark with more zest before serving. Store uneaten bark in an airtight container in the fridge or freezer.

I used Lily's white chocolate chips.
I used ChocZero maple syrup.* Some brands of syrup are more watery or runny and you may need to add more almond flour.
