These lemon cake balls don't require any baking! They are just 4 ingredients and don't require any wheat flour, eggs, dairy, or butter. They are easy to make and store well.
2cups (338g)white melting wafer, white baking chips or chopped white chocolate
Instructions
Add almond flour, lemon juice, zest and maple syrup to a large mixing bowl. Mix until everything is evenly combined. You should have a thick dough that can stick together if you pinch it. If the dough seems to wet, add a little more almond flour. If it's too dry, add a little more syrup.
Transfer the dough to the freezer to harden up, about 15 minutes.
After the dough is workable, use a 1 tbsp cookie scoop to scoop the dough and roll into smooth balls. Place the balls on a parchment-lined baking sheet. Freeze the balls for at least 20 minutes or untill fully firm.
In a microwave-safe bowl, melt the white chocolate in 20-second intervals, stirring in between until smooth. Alternatively you can do this on the stove using the double boiler method. If your chocolate is too thick, you can use a little coconut oil to thin it out.
Using your preferred dipping tool, dip and coat each ball into the melted white chocolate, letting the excess chocolate drip off. Place the coated balls back on the parchment-lined baking sheet. If desired you can garnish with chocolate drizzles or lemon zest. If garnishing with lemon zest, make sure to pat the lemon zest dry or it will cause discoloration on the chocolate coating. You can let the chocolate set at room temperature or in the fridge. Store leftover balls in an airtight container in the fridge or freezer.

White chocolate note: You can use white melting wafers, chopped white chocolate or white baking chips. If you need these to be dairy-free, make sure to use a dairy free white chocolate.
