Instructions
In a food processor, add walnuts and pulse until finely ground. Add in remaining ingredients. Pulse until dates are broken down and everything is combined. The finished result should look a little crumbly but when you touch the mixture, it should be slightly sticky and moist rather than dry. If you scoop out a small spoonful and squeeze, the mixture should be sticky enough to stay together.
Using a tablespoon, measure out 1 tbsp of the mixture and then press a few times into the palm of your hand to compact it before rolling into a round ball with both hands. Set aside. Repeat with remaining mixture.
Roll balls in cacao powder or other toppings like unsweetened coconut flakes or crushed nuts. Store in airtight container in fridge. Balls can be eaten straight from the fridge. Store up to one week.
