1cupfresh strawberry halves, for red ice or fresh blueberries (for dark purple ice)
1-2tbspwater
1bottle champagne or sparking wine
Instructions
In a blender, add strawberries and 1 tbsp water. Blend on highest speed until smooth. If needed, add more water so that the blender can properly puree the berries. If you are making the blueberry version, add blueberries and water and blend until smooth (it's okay if there are still little skin pieces, but you do want them to be quite small.)
Pour into ice cube molds (leaving a little room on the top for them to expand when they freeze) and freeze until set. I froze mine overnight. Right before serving, add ice to glasses and pour champagne over the ice.

VariationsThese drinks are great because you can customize them in lots of different ways:
Patriotic cocktails: use strawberry puree and blueberry puree to make red and blue star-shaped ice cubes for 4th of July or Memorial Day parties.
Mimosas: Freeze orange juice into ice cubes as they melt, they will turn the champagne into a classic mimosa.
Tropical champagne cocktails: Freeze mango puree and pineapple puree for a tropical twist on a mimosa
Italian Bellini: Instead of just adding peach puree, freeze it first in a fun shape and add it to the champagne.
