Preheat oven to 350°F. Line a large baking sheet with parchment paper or silicone baking mat.
In a bowl of a stand mixer, add pumpkin, peanut butter and eggs and beat with wire whisk attachment on medium high speed until well mixed. About 1 minute. Switch to paddle attachment. Gradually add in flour at low speed, until dough comes together. Dough should not be sticky. If it is, add a little more flour.
Remove dough and place onto a lightly floured pastry board. Lightly flour your rolling pin and roll out dough until 1/4 inch thick. Use cookie cutters to cut shapes. Re-roll dough scrapes and repeat until all dough is used up.
Place dog treats onto baking mat. Bake about 20-25 minutes or until edges turn golden brown. How long you bake will vary on the size of your treats. Let cool completely before storing. Store uneaten dog treats in fridge or freezer.
