Instructions
Add all ingredients into a large microwave-safe mug. Mix with a small whisk until the batter is uniform and the egg is completely beaten and incorporated into the batter.
Cook the cake in the microwave at full power for about 1 minute. Cooking time may vary depending on your microwave wattage. My microwave is 1100 watts.
Let cake cool a few minutes before consuming. You can plate the cake in a smaller plate or mug before eating. You can also top cake with your favorite frosting or whipped cream.
Notes
The cake will only fill about 1/3 to 1/2 of a large mug when it is done. However, you do want to use a large mug to cook it because it rises high while it is cooking before it settles back down.
So you can see the cake more clearly in the photos, I made double the recipe and plated the cake in a smaller mug for the pictures.
Make sure the egg is thoroughly beaten otherwise your cake will not turn out right.
If you do not want to use a microwave, you can try baking the cake in the oven at 350F for about 15-20 minutes.
This cake is lightly sweetened. If you prefer sweeter desserts, you can add 1 tsp extra sugar substitute to the batter. Or you can top the cake with a sweet frosting.
