Preheat oven to 350°F. Melt ice cream in microwave for about 30-50 seconds. Add in flour, baking powder and light eggnog. Mix with a large wooden spoon until batter is thick and smooth. Line mini muffin pan with mini liners. Scoop batter in, about 3/4 full. Bake for about 9-10 minutes or until toothpick inserted comes out clean.
While mini muffins are cooling, make glaze. Add sugar and 1 tbsp of eggnog and whisk with a fork. If too thick, add an additional 1 tbsp of eggnog and whisk until smooth. When muffins are cool, dip tops in glaze.
Notes
This batter is lightly sweetened because the glaze is very sweet. If you aren't going to add the glaze, I'd recommend adding some additional sugar to the muffin batter.
Make sure you use a full-fat ice cream that has a custard/egg base.
