Instructions
Preheat oven to 400°F. Lightly grease the surface of a sheet pan with cooking oil spray.
Use a 2.5 inch biscuit cutter to cut out the center of each slice of bread. Save the cut-out bread circles for another recipe (I used mine to make egg toast muffin cups).
Place toasts onto sheet pan. Crack an egg into the center of each toast. Cook in the oven for 8-10 minutes, or until egg whites are set. Garnish with bacon and scallions. Season egg with salt and pepper, to taste. Serve immediately.

Recipe Tips
I was able to fit 8 slices of brioche bread onto one sheet pan. If the bread slices you are using are bigger, you can reduce the quantity you are making or split the breads across two sheet pans. If you are using bigger slices of bread, you may also want to use a bigger biscuit cutter.
You can use the cut-out pieces of bread for croutons, egg toasts muffin cups, mini sandwiches, etc.
