These creamy, melt-in-your-mouth apple candies care an easy, two-ingredient treat. With a smooth, chewy texture and cozy apple flavor, they're perfect for fall snacking, holiday gifting, or satisfying your sweet tooth without turning on the oven or stove.
9oz (256g)white baking chips, about 1 1/3 cups, see note
1/3cup (87g)unsweetened apple butter, room temperature
Instructions
Line an 8 x 4 inch loaf pan with parchment paper, leaving some overhang on the sides for easy removal later. Grease the parchment paper with a neutral oil or a nonstick cooking spray.
Add white chocolate chips to a microwave-safe bowl. Heat in 15-30 second increments, stirring in between with a spatula, until it’s completely smooth and melted. Alternatively, you can also melt the chocolate on the stove using the double boiler method.
Stir in the room temperature apple butter with a spatula until the batter is smooth and uniform in color. It is important that the apple butter is brought to room temperature before using, otherwise it will cause the chocolate to seize.
Pour mixture into the prepared loaf pan and spread in an even layer. Cover with plastic wrap (greased with non-stick spray) and freeze until firm, at least 1 hour.
Once it is frozen solid, remove the pan from the freezer. Lift out of the pan using the parchment paper overhang and place it on a cutting board. Lightly grease a sharp knife with cooking oil spray. Cut into 1-inch squares. Garnish with coarse salt if desired.
Serve immediately, or store them in an airtight container in the freezer until ready to eat.
Notes
Because the candy is very sticky, it helps to grease the parchment paper and the knife to cut more easily.
White chocolate chips note: Make sure to use white baking chips and not real white chocolate. Real white chocolate contains cocoa butter which causes the candies to be too soft. Also choose a brand of white chocolate chips that melt easily. Some generic and cheaper brands don't melt well. I used Nestle brand.
