This creamy pistachio fudge is low carb, low sugar and keto-friendly. It only requires 2 ingredients and can be made ahead of time for gifting or an event.
1 1/2cups (255g)sugar free semisweet chocolate chips, or 1 (9oz) bag, I used Lily's
1/2cup (128g)pistachio butter with no added oils or sugar, room temperature
Instructions
Line an 8 inch x 4 inch loaf pan with parchment paper, leaving some overhang for easy removal later.
Add chocolate chips to a large microwave safe mixing bowl. Heat in 15-30 second intervals, stirring in between with a spatula until chocolate is completely melted and smooth. Add in the pistachio butter. Make sure your pistachio butter is room temperature or it will cause the chocolate to seize. Stir until it is fully incorporated and you no longer see streaks of pistachio. If desired, you can mix in 2 tbsp of finely chopped pistachios (about 15g) into your fudge.
Transfer the fudge into your lined baking loaf pan. Use a spatula to smooth and even the surface. If desired, you can sprinkle about 1 tbsp (7.5g) finely chopped pistachios on top.
Place the fudge into the fridge until set. Mine usually takes about 2-3 hours. Let the fudge come to room temperature for a few minutes before cutting with a large sharp knife. Cut fudge into approximate 1 inch squares. Uneaten fudge should be stored in an airtight container in the fridge or freezer.
Notes
This recipe uses chocolate chips sweetened with a sugar alternative. I used Lily's semisweet chocolate chips.* You can use other brands, though the texture of the fudge may be a little different depending on the sugar substitute being used.
