This creamy pistachio fudge is low carb, low sugar and keto-friendly. It only requires 2 ingredients and you don’t even need a stove to make it. The fudge stores well and can be made ahead of time for gifting.

This pistachio fudge is so easy to make. No need to hover over a stove or even use a candy thermometer. It takes just a few minutes to prepare.

Ingredients

  • Sugar-free semisweet chocolate
  • Pistachio butter

Sugar-free semisweet chocolate: This recipe uses semisweet chocolate that is sweetened with a sugar alternative. I recommend using semisweet or milk chocolate. I found that dark chocolate wasn’t sweet enough.

Pistachio butter: You can use store bought or homemade pistachio butter. To save time, I used store bought pistachio butter. I used the kind that is made with only pistachios and doesn’t contain any added oils, sugar or dairy.

If desired, you can also garnish the top with finely chopped pistachios. You can also stir in some finely chopped pistachios for more texture in your fudge but if you prefer a creamier fudge, you don’t need to add pistachios pieces to the fudge.

How to Make Keto Pistachio Fudge

  • The semisweet chocolate chips are melted until smooth. The pistachio butter is stirred in until fully incorporated.
  • If mixing in chopped pistachios, stir them in now.
  • Transfer the mixture to your prepared baking pan. Garnish with chopped pistachios if desired. Place into the fridge for a few hours until the fudge is set. Let the fudge come to room temperature for about 15-20 minutes and then cut with a large sharp knife.

Texture

This fudge is firm on the outside but very creamy when you bite in. The fudge is lightly sweet but not super sweet.

Expert Tips

  • If you prefer more pistachio flavor, add chopped pistachios on top or into the fudge.
  • If you prefer a sweeter fudge, use milk chocolate instead of semisweet.
  • I used store-bought pistachio butter to save time. I also have a recipe for homemade pistachio butter.

2 Ingredient Keto Pistachio Fudge

This creamy pistachio fudge is low carb, low sugar and keto-friendly. It only requires 2 ingredients and can be made ahead of time for gifting or an event.

Ingredients

  • 1 1/2 cups (255g) sugar free semisweet chocolate chips, or 1 (9oz) bag, I used Lily's
  • 1/2 cup (128g) pistachio butter with no added oils or sugar, room temperature

Instructions
 

  • Line an 8 inch x 4 inch loaf pan with parchment paper, leaving some overhang for easy removal later.
  • Add chocolate chips to a large microwave safe mixing bowl. Heat in 15-30 second intervals, stirring in between with a spatula until chocolate is completely melted and smooth. Add in the pistachio butter. Make sure your pistachio butter is room temperature or it will cause the chocolate to seize. Stir until it is fully incorporated and you no longer see streaks of pistachio. If desired, you can mix in 2 tbsp of finely chopped pistachios (about 15g) into your fudge.
  • Transfer the fudge into your lined baking loaf pan. Use a spatula to smooth and even the surface. If desired, you can sprinkle about 1 tbsp (7.5g) finely chopped pistachios on top.
  • Place the fudge into the fridge until set. Mine usually takes about 2-3 hours. Let the fudge come to room temperature for a few minutes before cutting with a large sharp knife. Cut fudge into approximate 1 inch squares. Uneaten fudge should be stored in an airtight container in the fridge or freezer.

  • This recipe uses chocolate chips sweetened with a sugar alternative. I used Lily's semisweet chocolate chips.* You can use other brands, though the texture of the fudge may be a little different depending on the sugar substitute being used.
