This easy high protein bread is low carb and keto-friendly. It bakes into a hearty, nutrient-dense sliceable loaf with no flour or yeast required, making it a simple gluten-free alternative for toast, sandwiches, or serving alongside your favorite meal.
Preheat the oven to 350°F (177°C). Line an 8 x 4 -inch loaf pan with parchment paper, leaving some overhang on the sides for easy removal.
Add the golden flaxseed meal to a high-powered blender and blend until very finely ground and flour-like. Transfer to a large mixing bowl. Add the baking powder and salt, if using, and whisk until evenly combined. If adding salt, I recommend adding 1/2 tsp.
Add the eggs to the blender and blend on medium for about 15 seconds, just until the whites and yolks are combined - do not overmix.
Pour the blended eggs into the flaxseed mixture. Using a spatula, stir and fold until completely incorporated and no dry patches remain. The batter will be thick.
Transfer the batter to the prepared loaf pan and use the spatula to spread it evenly and smooth the top. If desired, sprinkle 2 tsp of sesame seeds or bagel seasoning over the batter.
Bake for about 65–70 minutes, or until the loaf is risen and firm and a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for about 15 minutes, then use the parchment overhang to lift it out. Transfer to a wire rack and cool completely before slicing into approximate 1/2 inch slices. Store uneaten bread in an airtight container in the fridge or freezer.
Make sure to use aluminum free baking powder to eliminate any potential metallic aftertaste. I used Whole Foods baking powder.*

This bread is high in fiber, so you may want to consult with your doctor or nutritionist to determine how much to consume. We recommend slicing the bread into about 1/2 inch thick slices, which will yield about 12-16 slices and to consume plenty of water when eating because of the high fiber in the bread.
