Flaxseed meal: This recipe uses golden flaxseed meal. The flaxseed meal is pulsed in a high-powered blender until it becomes a flour-like consistency, which helps to create a smoother texture. I recommend using golden flaxseed for this recipe because golden flaxseed meal has a more mild flavor.

Eggs: Eggs are used to create structure for the bread.

Baking powder: Aluminum-free baking powder is used to help the bread rise. I do recommend using aluminum-free baking powder and not regular baking powder because this recipe uses a large amount of baking powder and baking powder with aluminum may leave a metallic aftertaste.

How to Make Keto Flaxseed Bread

  • The flaxseed meal is pulsed in a high powered blender until it has a flour like consistency.
  • The baking powder is whisked in. The eggs are blended in a blender just until they are mixed.
  • Stir the blended eggs into the flaxseed meal.
  • Transfer the mixture to your loaf pan. Bake the bread until done, about 65 minutes. Once fully cooled, the bread can be sliced with a bread knife into approximate 1/2 inch slices.


Expert Tips

  • You can add salt for more flavor. If adding salt, I recommend adding 1/2 tsp.
  • I also added some sesame seeds on top for garnish and texture, but this is optional. You can also add bagel seasoning on top.

3 Ingredient Keto High Protein Bread

This easy high protein bread is low carb and keto-friendly. It bakes into a hearty, nutrient-dense sliceable loaf with no flour or yeast required, making it a simple gluten-free alternative for toast, sandwiches, or serving alongside your favorite meal.

Ingredients

  • 2 1/3 cups (253g) golden flaxseed meal
  • 1 tbsp (11g) aluminum free baking powder
  • 8 large eggs

Instructions
 

  • Preheat the oven to 350°F (177°C). Line an 8 x 4 -inch loaf pan with parchment paper, leaving some overhang on the sides for easy removal.
  • Add the golden flaxseed meal to a high-powered blender and blend until very finely ground and flour-like. Transfer to a large mixing bowl. Add the baking powder and salt, if using, and whisk until evenly combined. If adding salt, I recommend adding 1/2 tsp.
  • Add the eggs to the blender and blend on medium for about 15 seconds, just until the whites and yolks are combined - do not overmix.
  • Pour the blended eggs into the flaxseed mixture. Using a spatula, stir and fold until completely incorporated and no dry patches remain. The batter will be thick.
  • Transfer the batter to the prepared loaf pan and use the spatula to spread it evenly and smooth the top. If desired, sprinkle 2 tsp of sesame seeds or bagel seasoning over the batter.
  • Bake for about 65–70 minutes, or until the loaf is risen and firm and a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 15 minutes, then use the parchment overhang to lift it out. Transfer to a wire rack and cool completely before slicing into approximate 1/2 inch slices. Store uneaten bread in an airtight container in the fridge or freezer.

  • This recipe works best with golden flaxseed meal which has a more mild flavor. I used Bob's Red Mill golden flaxseed meal.*
  • Make sure to use aluminum free baking powder to eliminate any potential metallic aftertaste. I used Whole Foods baking powder.*
