1/2cup (84g)allulose
1largeegg
1/2cup + 1 tbsp (81g)keto dark chocolate chips
Instructions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, stir together the peanut butter, sugar, and egg until smooth and evenly combined. The mixture should resemble a soft dough.
Use a 1.5 tbsp cookie scoop to scoop the dough and roll into balls. Arrange on the prepared baking sheet about 2 inches apart.
Use the back of a tablespoon to gently press a shallow well into the center of each cookie.
Bake for 10 minutes, or until the edges are set and lightly golden.
While cookies bake, melt chocolate in a microwave-safe bowl in 20-second intervals, stirring in between with a silicone spatula, until chocolate is smooth.
Let cookies cool for about 10-15 minutes, then spoon the melted chocolate into each indent. You can also pipe the chocolate in.
Cool completely at room temperature (or refrigerate briefly) until the chocolate firms up. Store any uneaten cookies in an airtight container in the fridge or freezer.

Make sure to use natural peanut butter with no added oils. I used Kirkland peanut butter.*
