These 4-Ingredient Keto Pumpkin Brownies are rich, fudgy, and incredibly easy to make with pumpkin, peanut butter, cocoa powder, and sugar-free syrup. With no flour, dairy, eggs or butter, these easy flourless pumpkin brownies have a soft, chocolatey texture and come together in just one bowl for a simple keto-friendly fall treat.
1/2cup (128g)unsweetened natural peanut butter with no added oils
1/3cup (79ml)sugar-free maple flavored syrup
1/4cup (28g)unsweetened Dutch process cocoa powder
Instructions
Preheat the oven to 350°F (177°C). Line an 8 x 4 inch loaf pan with parchment paper, leaving some overhang on the sides for easy removal later.
In a large bowl, whisk together the pumpkin, peanut butter, syrup and cocoa powder until evenly combined.
Transfer the batter to the prepared baking pan, spreading it evenly with a spatula.
Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the brownies to cool completely in the pan before cutting. If desired, I like to place the brownies in the fridge for a few hours before cutting. You can also frost the brownies before cutting. The frosting I used is in the recipe notes.
Store leftovers in an airtight container in the fridge or freezer.

Optional chocolate frosting (not dairy free):
1/2 cup sugar-free semi-sweet chocolate chips
1/4 cup heavy cream
Add chocolate chips to a medium bowl and set aside. Heat heavy cream in a small pot or pan over medium low heat. Heat until simmering. Pour hot heavy cream over chocolate chips. Let sit for 60 seconds then gently mix until chocolate is completely melted. If the chocolate is not completely melted, you can briefly heat in the microwave and stir again until melted. Frost ganache over surface of the brownies.
