These pumpkin brownies are rich and fudgy. They are also low carb, low sugar and keto-friendly. The brownies need just 4 ingredients and don’t require any flour, flour substitutes, eggs, dairy or butter. The brownies take only a few minutes to prepare.

These brownies are an easy one-bowl recipe. They come out very soft, rich and fudgy and can be made ahead of time.

Ingredients

  • Pumpkin
  • Cocoa powder
  • Sugar-free maple flavored syrup
  • Peanut butter

Pumpkin: I used canned pumpkin for this recipe. I recommend using a brand that makes a thick pumpkin puree. Brands that are more watery can make the batter too wet.

Cocoa powder: I recommend using Dutch process cocoa powder which has a richer cocoa flavor and is less acidic.

Sugar-free maple flavored syrup: Most brands of keto-friendly maple flavored syrups should work. The syrup is used to sweeten the brownies.

Peanut butter: I used unsweetened salted natural peanut butter with no added oils. The only ingredients should be peanuts and salt.

How to Make Keto Pumpkin Brownies

  • Mix all the ingredients until they are evenly combined and the batter is uniform in color.
  • Transfer the batter to your prepared loaf pan. Smooth the surface with a spatula. Bake for about 40-45 minutes or until the brownies are set.
  • Allow the brownies to fully cool before cutting and serving. I also like to refrigerate them for a few hours before serving to help them firm up a little more. You can also add frosting to the brownies before serving. These brownies are topped with chocolate ganache frosting.

Expert Tips

  • The brownies are lightly sweet. You can add a frosting on top if you prefer sweeter brownies. You can also add chocolate chips to the batter.
  • The brownies are fudgy and soft. They have a firmer texture if they are placed in the fridge for a few hours before serving.

  • Optional chocolate frosting (not dairy free):
    • 1/2 cup sugar-free semi-sweet chocolate chips
    • 1/4 cup heavy cream
    • Add chocolate chips to a medium bowl and set aside. Heat heavy cream in a small pot or pan over medium low heat. Heat until simmering. Pour hot heavy cream over chocolate chips. Let sit for 60 seconds then gently mix until chocolate is completely melted. If the chocolate is not completely melted, you can briefly heat in the microwave and stir again until melted. Frost ganache over surface of the brownies.
