These easy 4-ingredient waffles come together in just one bowl for a quick and easy breakfast. Made with almond flour, they're low carb, low sugar, keto-friendly, and have a light, fluffy center.
In a medium bowl, whisk together the eggs and keto maple syrup until evenly combined.
Add the almond flour and baking powder. Mix until no dry spots remain and an even batter forms.
Preheat a waffle maker according to the manufacturer's instructions. Lightly grease the waffle maker with cooking spray.
Pour some batter into the center of the waffle maker and spread gently if needed. The amount of batter needed will vary depending on the size of your waffle maker. If using a mini waffle maker then you will need between 3-4 tbsp of batter per waffle. Close the lid and cook for 2-4 minutes, or until the waffle is golden brown on the outside and cooked through. The waffle should also release easily from the iron when it is done cooking. Remove the waffle and repeat with the rest of the batter.
Let waffles cool slightly, but they are best enjoyed warm. You can serve the waffles with your favorite waffle toppings like butter, additional keto maple syrup, berries, and whipped cream. Store any uneaten waffles in an airtight container in the fridge or freezer.
Notes
Make sure to use superfine almond flour and not regular almond flour. I used Kirkland superfine almond flour.
Any sugar-free maple flavored syrup using a sugar substitute should work. I used ChocZero Maple Syrup.*
The number of waffles will vary depending on the size of your waffle iron. I used a Dash mini waffle maker* which makes waffles around 3.5 inches wide and the was able to make eight of them. Estimated nutrition is for one waffle assuming the recipe makes 8.
