These healthier No Bake Peanut Butter Chocolate Bars are rich, fudgy, and come together with just 4 ingredients—no oven required. Chill, slice, and snack away! They’re firm enough to hold at room temp and perfect straight from the fridge or freezer.
2cups (512g)unsweetened natural peanut butter with no added oils
5tbsp (2.5fl oz/74ml)maple syrup
6tbsp (38g)coconut flour
1cup (168g)dark chocolate chips
Instructions
Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal.
In a medium bowl, mix together the peanut butter, maple syrup, and coconut flour until evenly combined. The mixture should be thick.
Press the mixture evenly into the lined pan. Freeze for about 5-10 minutes, or until firm on the surface.
Meanwhile, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between with a silicone spatula, until the chocolate is melted and smooth. You can also melt the chocolate on the stove using the double boiler method.
Pour the melted chocolate over the peanut butter layer and spread evenly across with an offset spatula.
Place the bars in the fridge and chill for 2-3 hours (or overnight), or until the chocolate is set and the bars are firm enough to cut.
Lift the bars out of the pan using the parchment and cut the bars with a sharp knife.
Store bars in an airtight container in the fridge or freezer. These can be eaten straight out of the fridge or at room temperature.
Notes
Peanut butter note: Make sure to use a peanut butter with no added oils. The recipe will not work if the peanut butter has added oils. There are some peanut butters that are labeled "natural" or "natural style" but still contain added oils so make sure to check the ingredients label. I used Kirkland Organic Peanut Butter*.
Chocolate: I used bittersweet chocolate chips for the top layer. You can use other chocolate for the top layer such as or semisweet, milk or white chocolate (assuming you don't need the bars to be dairy-free).
