Beat the summer heat with this no-bake S'mores Pie! With a graham cracker crust, chocolate fudge filling and toasted marshmallow topping, this chilled treat is perfect for any occasion and requires minimal effort. It also has a secret hidden healthy ingredient in the chocolate fudge filling.
1 1/2cups (341 g)lowfat cottage cheese, small curd, see note
1(9-inch)premade graham cracker pie crust
1 1/4cups (62 g)mini marshmallows
Instructions
Add chocolate chips to a microwave safe bowl. Heat in 30 second increments, stirring in between with a spatula, until it’s completely smooth and melted.
In a blender or food processor, blend the cottage cheese and melted chocolate until smooth and creamy, with no cottage cheese chunks remaining. You will need to stop your blender/food processor a few times to scrape the sides and under in order to help the blender mix and blend the cottage cheese fully.
Pour the pie filling in the graham cracker pie crust, spreading it out evenly with a spatula.
Refrigerate the pie until the filling is set. It will need a few hours or you can also refrigerate overnihgt. If desired, you can freeze the pie for an hour before serving. While the pie filling sets nicely just in the fridge, freezing it will make it easier to cut and remove slices because of the delicate nature of the graham cracker crust.
Before serving, evenly sprinkle mini marshmallows over the top of the pie. Toast the marshmallows with either a kitchen torch, or place your pie into your broiler and broil the pie for a few minutes on high until the marshmallows are toasted. If doing this method, make sure to watch the marshmallows the whole time so the marshmallows don't burn. Let the pie cool for a few minutes before slicing with a large sharp knife and serving.
Notes
I used 2% cottage cheese, small curd, though you can also use 4%. I used Daisy cottage cheese. I don't recommend using Good Culture brand. Good Culture cottage cheese has a stronger acidic flavor and doesn't work as well for this recipe.
This pie is very rich and sweet. We recommend cutting it into small slices, about 12-14 servings per pie.
Make sure to use milk chocolate chips. The pie will not set the same if you change the type of chocolate.
