Silken tofu replaces all of the heavy cream in this rich and chocolatey mousse. You won’t even know it’s tofu! Plus, it's so easy to make with about 10 minutes of prep time.
8ozsilken tofu, one package is usually more than 8 oz, so I had to measure it out
8ozbittersweet chocolate, chopped
1tbspvanilla extract
Instructions
Melt chocolate in a double boiler and set aside. If you don't have a double boiler, you can melt chocolate in microwave. I stick mine in one minute at a time, then take it out and stir, until it is completely melted.
Put tofu in food processor and puree until it is smooth and creamy.
Add chocolate and vanilla extract into the tofu and blend again.
Put the chocolate mousse into small glasses or ramekins (I put mine in ramekins) and smooth out the top of the mousse. Put in the refrigerator to set for several hours.
Serve chilled with whipped cream, berries or ice cream.
