Preheat oven to 350°F. Grease mini muffin molds. Mix Bisquick, egg and milk in a large bowl with a whisk. It's okay to have some remaining lumps.
Dice precooked bacon into small pieces. Mix about 2/3 of the pieces into the batter. Pour batter about 1/2 full into each muffin mold. Sprinkle a few bacon pieces on top. Bake for approximately 10 minutes until knife inserted comes out clean.
