Garlic Parmesan Zucchini Noodles

I’m always trying to find ways to sneak zucchini noodles into Mr. K’s meals. He’s on board with everything cauliflower and has enjoyed the broccoli bread grilled cheese, broccoli pizza, zucchini pizza, and zucchini grilled cheese, but he still isn’t really that into zucchini noodles. But this sauce is so fragrant and flavorful that he didn’t mind that I made them with zucchini noodles.

You can pair it with any protein of your choice or just serve the zucchini noodles by themselves. It was really hard to capture, but every time I lifted up my fork, there was melted cheese stretching and clinging to the noodles. I adore melted cheese.

Garlic Parmesan Zucchini Noodles

Ingredients:

  • 2 medium to large zucchinis, spiralized
  • 20 peeled medium shrimp
  • 5 cloves of garlic, minced
  • 5 tbsp butter
  • 1/2 cup - 3/4 cup grated Parmesan cheese

Directions:

1. In a large skillet over medium high heat, cook shrimp until just cooked. Set aside.

2. In a small saucepan, add garlic and butter and bring to a simmer. Stir until butter has melted and then cook for a few minutes, keeping the butter on a simmer, until the garlic flavor has fused into the butter (about 2-3 minutes). Set aside.

3. In a separate large skillet, cook zucchini noodles over medium heat, until they are tender but still crisp. Drain out all the water released from the zucchini. With the stove top still on medium heat, add shrimp in with the zucchini noodles. Gradually add in garlic butter, tossing and mixing after each addition. You may not need to use the entire amount of garlic butter, so taste after each addition and stop when you feel that your zucchini noodles and shrimp have enough garlic butter. If your zucchini noodles release more water, you can drain again. Sprinkle cheese on top (between 1/2 cup to 3/4 cup) and toss noodles a few times so that the cheese is incorporated and heated. Serve warm and top with more cheese if desired.
