Irish soda bread with raisins is an easy bread to make for St. Patrick’s Day. It’s a simple quick bread that is lightly sweet with plump raisins mixed into the batter.
With St. Patrick’s Day coming up I’ve been wanting to try some recipes to celebrate. Irish soda bread is one that appealed to me because it looks easy to make. I found a recipe on All Recipes that looked really good.
I did some research and learned that traditional Irish soda bread does not have raisins, but I found lots of other recipes that include them. I wanted to try it, so I made a loaf with raisins, but you can leave them out if you don’t like them.
The best thing about this bread is that you don’t need any yeast to make it. It is leavened with baking soda, so it’s very easy to make.
Ingredients
- All-purpose flour
- Baking powder
- White sugar
- Salt
- Baking soda
- Egg
- Buttermilk
- Melted butter
- Raisins (optional)
How to Make It
Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture.
Mix just until moistened. The batter should be a bit lumpy.
Stir in butter. At this point the batter will be smoother with the addition of the butter. Add in raisins. Pour into prepared pan.
Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.
I really like how this turned out. It’s soft and slightly sweet. I think it tasted even better the day after I made it after it had a chance to rest. It’s delicious warmed up with some butter on top.
