BLT Guacamole

I came across a recipe for BLT guacamole on the California Avocado Commission website. Immediately I thought, Duh, of course bacon would make guacamole taste better.

I love making fresh guacamole. I discovered how easy and delicious it was when we ordered it made tableside at a Mexican restaurant a long time ago. After that, I always made my own, especially for BBQs, Superbowl, etc.

Of course, I always had to plan in advance. Get avocados ahead of time and give them a chance to ripen. Buy fresh cilantro only a few days before so they don’t spoil. It was really fun for a while, but it didn’t really seem like my family appreciated the effort.

So last time we had a bbq, I decided to just buy some premade guacamole from Costco instead of having to buy so many fresh ingredients. After tasting it, my siblings told me that they like mine better.  Aww. It was great to know that they had indeed appreciated my homemade one. So I decided to make my own guacamole again, and this one was the perfect one.
BLT Guacamole
The recipe I looked at actually uses a lot of mayonnaise in the guacamole, which I guess fits better with the BLT theme. But I don’t like mayonnaise. So I decided to make my own version. I basically took my go-to guacamole recipe. I eliminated some of the ingredients that I don’t normally see on a BLT burger like cilantro. I also left out the lettuce. But I kept the tomatoes, and added cooked crispy bits of bacon.

The result was delicious. I may never go back to regular guacamole again.

BLT Guacamole

A classic BLT meets guacamole! This is a great dip for football parties and other get-togethers.

Ingredients

  • 3 avocados mashed
  • Juice of 1 lime
  • 1 tsp salt
  • 1/2 cup diced onion
  • 2 roma tomatoes diced
  • 1 tsp minced garlic
  • 1 tsp black pepper
  • 5 strips of crispy cooked bacon diced into very small pieces

Instructions

  • In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, tomatoes, and garlic. Stir in pepper and bacon. Refrigerate for an hour to let flavors sit or serve immediately.

  1. Mm, just made this and added some fresh mozarella as well, the flavors are wonderful! What a wonderful recipe! 

  2. I like mayonaise, but not in guacamole! Love the idea of adding bacon.

    • I’m not a huge fan of mayo but I’ll eat it with tuna, egg salad, and on some other things. But mixing it with my guac didn’t sound appealing.

  5. BLT guacamole! That is a brilliant idea. I always make my own, too. It’s so easy and tastes so much better that the pre-made stuff. Heck, I like even just eating avocado sandwiches!
