This mug cake idea came to me as I was dosing off to sleep. I love how festive it is.

This is an easy cake to make for the holidays and maybe a holiday party. It’s light and fluffy and peppermint flavored.

To make the layers, you will need two extra bowls to divide up the batter. You leave half of the batter white and the other half has a few drops of red food coloring mixed in. Then you alternate adding each batter. It takes a few more minutes, but the result is so pretty!

Ingredients

  • 4 tbsp all purpose flour
  • 1/4 tsp baking powder
  • 1 1/2 tsp vegetable oil
  • 3 tbsp fat free milk
  • 2 tsp granulated sugar
  • 1/4 tsp peppermint extract
  • 1/8 tsp vanilla extract
  • 2-3 drops of red food coloring

Instructions

  • Using a small whisk, mix flour, baking powder, oil, milk, sugar, vanilla and peppermint in a small bowl until no lumps remain. Pour half of the batter into a separate small bowl. Add food coloring to one of the bowls of batter and mix until it turns uniformly red.
  • Very lightly grease the bottom of a microwave-safe mug. Pour 1 1/2 tbsp of plain batter into the center bottom of mug. Add 1 1/2 tbsp of red batter directly on top, also in the center. Don't worry if batter doesn't yet reach edge of mug. As you continue to add more layers on top, the bottom layers will spread out and you'll see alternating circles of the two colors. Continue with remaining batter, alternating between the two colors until you run out of batter. Cook for about 1 minute. Top of cake should be dry to the touch.

  1. I made this exactly to the recipe and all I could smell and taste was overpowering flour 🙁 4tbsp seemed like a bit much compared to everything else.

    • The cake should actually taste and smell of peppermint. 4tbsp of flour is def not too much. it’s the base I use for all my white cake recipes. I do think that the flavor of this cake is a little plain since it’s basically just peppermint flavored, so i always recommend serving it with some whipped cream or frosting rather than just eating it plain.

    • sorry I’m not sure how to estimate the cost for you. It really depends on how many ingredients you have on hand and what you still need to buy.

  3. Is this correct: only two TEASPOONS of sugar? Most of your other recipes call for more like two tablespoons for this amount of flour.

    I made this last night and had high hopes, but unfortunately it was probably the worst cake I have ever eaten; all I could taste were overpowering peppermint and flour. I threw it out after two bites.

    Please check if that’s a typo; this could potentially be delicious, but as written… it’s really not.

    • yes it is supposed to be 2 tsp. some of my older recipes require a lot more sugar because they also had more eggs and oil in the recipe too. this recipe has only a few ingredients so it doesnt need as much sugar. perhaps you added a bit too much peppermint? I’ve made this several times and have enjoyed it. it tastes like a candycane to me. sweet and minty, but not overly sweet because candy canes usually aren’t. perhaps you can try with slightly more sugar, like add 1 more tsp?
