I’ve been obsessed with breakfast lately, can you tell? It’s ironic because growing up breakfast used to be my least favorite meal of the day. I think that’s now switched to lunch. I hate how limited lunch menus are.

My favorite meal is still dinner but breakfast is what I think about most recently. I find myself looking forward to weekend breakfast and brunch, when I can go all out and take a break from my usual healthier weekday breakfasts. I know it’s only Thursday but I’m so ready for the weekend!

Donut halves are lightly toasted with cheese, bacon and a runny egg. This is a truly indulgent breakfast sandwich.

Ingredients

  • 3 glazed donuts fresh or day-old, sliced in half lengthwise
  • 6 slices of bacon cooked to desired doneness
  • 3 slices  of monterey jack or provolone cheese
  • 3 tbsp of unsalted butter softened

Instructions

  • Spread about 1/2 tbsp butter on the inner side of each donut half. In a frying pan, cook bacon and fry eggs to desired doneness.
  • Preheat another frying pan on stove, using medium heat setting. Place 3 of the donut halves, butter side down into preheated pan. Cook until toasted and golden. Flip over. Add cheese, bacon. Take remaining donut halves and  place on top, buttered side facing up. Carefully flip entire sandwich over so other buttered side can cook until golden. The cheese should start to melt in the process. Flip sandwich over again and cook slightly longer until cheese is completely melted.
  • Add egg into the sandwich. Eat immediately

  1. Whoa! Why can’t donuts just be healthy for us! I think my husband would go nuts over this… maybe as a treat every now and then 😉 Love the golden crust that the donuts have! You take the most drool-worthy photos Kirbie!

  2. Holy. Moly. As if a doughnut wasn’t bad enough.. you had to go put bacon on it! Looks delicious.
