Egg In a Hole Grilled Cheese Sandwich

I’m totally in love with this sandwich. It’s a breakfast grilled cheese sandwich that starts with egg-in-the-hole toast, slices of melted Monterey Jack cheese, spinach and crispy bacon.

I’ve made eggs in a hole toast a few times and it works so amazingly well for a fancy looking grilled cheese sandwich.

I’m going to keep the words to the minimum and let the photos do the talking.

I’ve made some pretty fun grilled cheese creations, like my macaroni and cheese grilled cheese, burrito grilled cheese, and pizza grilled cheese but this is my favorite one yet. It felt like a breakfast sandwich I’d order at a restaurant. I’m totally craving one as I write this.


Fried Egg Grilled Cheese Sandwich


  • 6 slices of French or sourdough bread
  • 9 leaves of spinach
  • 6 slices of bacon
  • 6 slices of monterey jack or provolone cheese
  • 3 tbsp of butter, softened


1. Cook bacon until it reaches desired crispness.

2. Take 3 slices of bread and cut out holes in the center. Lightly oil and preheat a frying pan on stove, using medium heat setting. Spread butter on one side of each of the bread slices. Place butter side in preheated pan. Crack 3 eggs and put into the center of each hole. Cook until egg whites are completely cooked and bread is toasted. The egg white should also have browned at the bottom and completely sealed the bread hole, so the toast looks whole again.

3. Carefully remove toast from frying pan. Take the 3 remaining slices of bread, and spread butter on one side. On the unbuttered side, assemble a slice of cheese, spinach, and bacon, and then the another slice of cheese. Place buttered side down into pan. Cook until bottom is golden and cheese begins to melt. Carefully place the egg in hole toast back on top (with the exposed egg portion facedown into sandwich and the brown toasted side facing up). Serve immediately.

  1. This is making my morning yogurt look bad 🙂 Seriously, this looks so yummy, and having spinach leaves is a great idea.

    • The spinach was great! It balanced out the bacon quite well. It’s just a few ingredients, but I really enjoyed these! I must make them again soon!

  8. I am a little confused  ,Is all that bread one sandwich or three ? the pic it looks so big  but says yield 3.  Its looks so good. Would like to try it.
