Earlier this week, I had my annual physical. I was trying to be good the few days leading up to the physical and then when it was over, I immediately made these sandwiches which had been consuming my mind!

I’ve been wanting to make a spaghetti grilled cheese for a while. But I didn’t want to use traditional spaghetti noodles because I was afraid it would be too difficult to eat. So I chose a shorter pasta and it worked out beautifully. I also didn’t cook these sandwiches the traditional way. Instead, thy are finished off in the oven. This allows the cheese to melt and holds the pasta in place when enjoying.

Spaghetti Grilled Cheese Sandwiches

These indulgent sandwiches are stuffed with pasta, marinara sauce, and gooey melted mozzarella. The mozzarella cheese helps the pasta stay in place, making this one delicious sandwich.

Ingredients

  • 4   slices of bread
  • 1/2 cup uncooked pasta, shape of your choice
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • additional fresh mozzarella chunks, optional
  • tbsp softened butter or mayonnaise

Instructions
 

  • Bring a medium pot of water to boil over stove. Add in pasta. Cook until just done and drain out water. Add in about half of the marinara sauce and toss pasta in the sauce.
  • Spread butter or mayonnaise on one side of each of the four slices of bread. Place buttered-side bread onto grill, cast iron, or whatever cooking device you like to make grilled cheese. Cook on medium high heat until the buttered side is brown and crunchy.
  • To form sandwiches, takes one slice of bread, buttered side facing down, and add half of the pasta across. Sprinkle 1/4 cup cheese across the pasta. Add a few dollops of the remaining marinara sauce. If desired, you can also add a few chunks of fresh mozzarella to make your sandwich extra cheesy. Pasta will initially be loose, but when the cheese melts, it will come together. Place another piece of bread on top, with the crunchy side facing up. Repeat with remaining sandwich. Place sandwiches into a toaster oven or regular oven and cook at 375F, until cheese is melted. Serve while warm.
