2 Ingredient Crispy Keto Onion Rings

These super crispy onion rings are easy to make. They need just 2 ingredients and are keto-friendly and low carb. No  frying needed. The onion rings can be enjoyed with your favorite dipping sauce.

I was inspired to make crispy onion rings without the need for traditional breading or frying after making crispy cheese balls with just cheese and egg. These onion rings are baked until golden and crispy. They are so easy to make and you can customize them with other herbs and spices too.

  • Onion
  • Grated parmesan cheese

Onion: You will need approximately one large onion for this recipe. Try to choose a large onion so that you get larger-sized onion rings.

Grated parmesan cheese: This recipe uses pre-packaged freshly grated parmesan cheese. This is the kind where the parmesan cheese is the size of small crumbs. It is usually sold in small containers, must be refrigerated and must be consumed within a few days of opening. This is not the kind sold in shakers that are shelf-stable until opening. We recommend using the pre-packaged instead of grating your own parmesan cheese. The pre-packaged kind contains a small amount of cellulose to prevent caking and it also helps to form a crispier cheese crust around the onion rings. We also recommend that you stick with parmesan cheese and not try using another cheese to substitute. We tested this with several cheeses, but none of them got as crispy as the parmesan version.

How to Make Keto Onion Rings

  • Slice onion into 1/2 inch thick rings. Separate the individual rings from the slices and choose ones that are just slightly smaller in diameter than your donut mold. If some onion rings are too wide, you can also cut the ring to fit.
  • Add about 1.5 tablespoons of parmesan crumbs to the bottom of each donut mold. Add an onion ring to each mold. Then sprinkle another 2.5 tablespoons of parmesan on top, covering the onion.
  • Bake onion rings for about 15 minutes or until golden brown. Let onion rings cool for a few minutes. They will firm up even more as they cool. Then remove the rings and enjoy with your favorite dipping sauce.

Ingredients

  • 1 large onion
  • 1.5 cups (120 g) packaged grated parmesan see note before starting

Instructions

  • Preheat the oven to 400°F (204°C). Grease a 6-cavity nonstick donut pan with cooking oil spray.
  • Wash and peel your onion. Cut into 1/2 inch thick rings. Separate the layers into individual rings and choose 6 that are slightly smaller than your donut molds so that they fit inside each cavity without touching the edges or center.
  • Sprinkle about 1.5 tablespoons of cheese inside each donut cavity to cover the bottom. You don't need to use the full amount. Just use enough to add a layer of cheese to the bottom. Then place your an onion ring in each cavity. Add about another 2.5 tablespoons of cheese over each onion ring to cover the ring completely and fill your donut cavity. See photos in post for reference. The amount of cheese needed may vary depending on the size of your onion ring and your donut pan.
  • Bake donuts for about 12-15 minutes or until the surface is golden brown. Remove donuts from oven and allow them to cool slightly. As they cool, they will continue to crisp up. Once the onion rings are no longer to hot too touch, remove them from the donut pan. They should slide out easily if you greased the pan. Serve onion rings with your favorite dipping sauce.

Notes

  • This recipe works best with prepackaged freshly grated parmesan cheese. This is the kind sold in small plastic containers, must be refrigerated and must be consumed within a few days of opening. See photo in post for reference. The parmesan should resemble small fine crumbs. We recommend using pre-packaged over grating your own cheese because the pre-packaged version contains a small amount of cellulose and this will help the cheese bind and crisp up.
  • This is not the kind of parmesan cheese that is sold in shakers and is shelf-stable until opening.
  • We tested with Belgioioso grated parmesan cheese* and Amazon grocery grated parmesan cheese*.
  • We used a Wilton donut pan.*

  • We tested this with many different cheeses and parmesan worked best.
  • We also tested with different parmesan variations including freshly grated, shredded, and found that the pre-packaged grated parmesan worked best.
  • You can double this recipe if you own two donut pans. That is what we did for the ones in the photos.
  • Even though you will need a large onion, you only use a small portion of it, about 38 grams for 6 onion rings. The estimated nutrition is calculated with 38 grams of onion.
