One of my favorite foods is glutinous sweet rice balls (called Tang yuan). They are small balls made of glutinous rice flour. Very chewy and slightly sweet. I love soups, food dishes that contain the chewy rice balls. One of the traditional Chinese desserts that contain rice balls is a rice wine soup.
Rice wine soup is supposed to help boost your health. It is quite tasty too. It is made with fermented rice. My grandma used to make the fermented rice herself. I don't know how to make it, and instead I just buy it premade. At my Ranch 99, you can find containers of it in the refrigerator section.
To make the wine soup, you simple scoop some spoonfuls of fermented rice into a pot and boil with water. Add sugar until it is sweet enough for you. Then add glutinous rice balls, which are done cooking as soon as they float to the top. At the very end, add an egg after scrambling it first in a bowl.
Sometimes I make my own glutinous rice balls and sometimes I buy the frozen premade ones. I generally prefer making my own, because the store ones are quite tiny. But I like how the premade ones come in pink and white. So when I want something with pretty colors, I'll use the premade ones. They usually look something like this:
To make your own, simply buy a bag of glutinous rice flour. You mix the flour with water. Add enough water to form a sticky dough. Then you roll the dough into small balls and drop them into boiling water to cook them. So simple!
The wine soup is usually served warm. I like how the pink and white sweet rice balls look in the rice wine soup.
What is your water to fermented sweet rice ratio?
I don’t have an exact amount but it’s usually around 1-2 tbsp for 1 cup of water. A lot of it depends on personal preference and how strong your fermented rice is.
I got the recipe to make the fermented rice wine from Lau Lau.
nice!
Thank you for sharing.
Will try this soup tomorrow, as I had just finished making the fermented rice wine.
How much do you put in the soup?
A few tablespoons. It really depends on how much you are making and how strong you want it. It’s up to your personal preference, I don’t have an exact amount I put in. I just put a few spoonfuls and taste and maybe add more if I think it needs more.
I love this type of food. Thank you for sharing. I shall try to make it.
