Waffle Grilled Cheese

Fluffy savory buttermilk waffles and melted cheese make a delicious grilled cheese sandwich.

Here is my latest grilled cheese creation. I love the crunch of the toasted waffles and the extra pockets of gooey melted cheese in the waffle grooves. It’s so simple and yet so comforting.

I got the idea to make these after watching The Great Food Truck Race when one of the trucks made a grilled cheese sandwich with their liege waffles. I wasn’t too keen on a sweet and salty combination, so I decided to make mine with buttermilk waffles. I also didn’t want to put the cheese in the middle of a single waffle. I really liked the idea of having melted cheese in all of the waffle crevices.

These came out just as I hoped. Super crunchy exterior, fluffy interior, and melted cheese with every bite. They make a fun breakfast, brunch, or lunch.

Waffle Grilled Cheese

Savory buttermilk waffles and melted cheese make a delicious grilled cheese sandwich. These are easy to make and fun to eat!

Ingredients

  • large egg
  • 1 cup buttermilk
  • 1/4 cup butter melted 
  • tsp vanilla
  • cup  all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 10  slices white cheddar cheese

Instructions

  • In a large mixing bowl, whisk together the eggs, buttermilk, butter, and vanilla. Add in flour, baking powder, baking soda and salt and mix until batter is just about smooth.
  • Spray your waffle iron with a non-stick cooking spray and then preheat it. Use slightly more than 1/3 cup of batter (for a standard 8-inch round waffle iron). Cook until waffles are golden brown and crispy. 
  • Slice finished waffles into quarters. Place a slice of cheese on half of the waffle pieces and place another waffle on top of each one. Place the waffle sandwiches back on the grill and heat until center cheese is melted (it's okay that your waffle iron won't be able to close completely). Serve warm.
