Speculoos cookie butter flavored cake is stuffed with chocolate truffles, creating a gooey, melted chocolate center. This cake is only 5 ingredients and is ready to eat in less than 5 minutes!
I’m a little obsessed with gooey desserts right now. And this mug cake totally hits the spot. I took my cookie butter mug cake recipe and added a few truffles to it. The ganache center of the truffles helps keep the chocolate in a melted state rather than cooking into the cake, which is why I chose truffles over using plain chocolate. It’s also a great way to use up too many chocolate truffles, which my house is currently full of.
Someone (me) may have gone a little crazy buying holiday chocolates while shopping at Costco the other day. I’ve also realized recently that my house could be an ad for products purchased at Costco. I’m always coming across so many great deals and our house has slowly become furnished with items found at Costco: pans, cutting boards, anti-fatigue mats, baking mats, towels, coffee cups, serving plates…the list is endless.
Now if only they would start carrying cookie butter because I go through the small jars of cookie butter really fast.
This cake is very moist and fluffy from the cookie butter. And the melted chocolate center just makes it even better. You can eat it plain or top it with some ice cream. It’s best enjoyed warm!
Cookie Butter Chocolate Lava Mug Cake
Ingredients
- 3 tbsp cookie butter spread
- 1/4 tsp baking powder
- 4 tbsp all purpose flour
- 4 tbsp low fat milk
- 2 dark chocolate truffle balls
Instructions
- In a microwave-safe mug (an 8 oz is fine as the cake doesn't rise too high), add the first four ingredients. Mix with a small whisk vigorously until batter is smooth. Place truffle balls into the center of the batter, pushing them in until they are completely covered or almost completely covered.
- Microwave your cake for 45-55 seconds. Cooking time may vary slightly depending on your microwave. I recommend stopping earlier rather than later to check on the progress of the cake. Cake is done when it puffs up and looks mostly cooked, but may still be slightly gooey around the edges. Careful not to overcook if you want to maintain the gooey chocolate center. Let it cool a minute or two before eating. Cake is best consumed warm.

I didn’t think it was possible to have too many chocolate truffles! Then again, that’s why I don’t buy the Costco ones – I would be eating the whole thing. Although I’m tempted to buy some just to make this cake!
I can handle the small truffle bags at the grocery store, but the Costco boxes/bags are huge! And I bought several of them because of course I had to try all the different kinds they were selling. This cake is such a great shortcut when you want that lava cake taste but without having to deal with the oven, etc.
