3 Ingredient Keto Donuts

These soft donuts are low carb and keto-friendly. They only need 3 ingredients and don’t require any frying. The dough takes less than five minutes to prepare. The donuts are an easy breakfast, brunch, dessert or snack.

These low carb donuts are so easy to make. The dough comes together in less than five minutes and you don’t even need a mixer. I like to drizzle mine with glaze but you can also roll them in cinnamon sugar or dip them in chocolate.

Ingredients

  • Superfine almond flour
  • Sweetener
  • Greek yogurt

Superfine almond flour: Make sure to use superfine almond flour which has a consistency most similar to flour. If the almond flour is not superfine, your donuts will end up being more gritty rather than soft.

Sweetener: I recommend using a monkfruit erythritol blend for the sugar-free sweetener. Avoid using allulose or an allulose blend. Allulose adds too much moisture to the donuts and also cause them to brown too quickly before they are fully done cooking.

Greek yogurt: Plain Greek yogurt is added to keep the donuts soft and light. You can use whole milk, low fat or fat free Greek yogurt.

How to Make Keto Donuts

  • The almond flour, sweetener and yogurt are all mixed together.
  • Use a 1.5 tablespoon cookie scoop to scoop the dough and roll into smooth balls.
  • Place the balls onto your prepared baking sheet. Bake the donuts for about 20 minutes or until they are lightly golden on top.
  • Allow donuts to cool slightly before enjoying. You can also drizzle the donuts with glaze before serving.

Texture

These low carb donuts have a soft and moist texture and are lightly sweet. While they don’t taste the same as traditional fried donuts, they do taste similar to baked cake donuts.

Expert Tips

  • Much like regular donuts, these donuts are best consumed within a few hours after they are cooked. The donuts will have a soft, moist and slightly chewy texture when they are done. However, they will become more firm and less soft if not consumed within the first few hours.
  • Avoid using allulose or an allulose blend sweetener for these donuts. Allulose will make the donuts too moist and will also cause them to brown too quickly.

Soft, low carb donuts that are easy to make. These donuts need just 3 ingredients and one bowl to make the dough. No mixer needed. You can customize with your favorite donut toppings.

Ingredients

  • 1 7/8 cups (179 g) superfine blanched almond flour you can measure out 2 cups and remove 2 tbsp for 1 7/8 cups
  • 1/4 cup (48 g) sugar-free sweetener see note before starting
  • 1/2 cup (118 g) plain Greek yogurt can use fat free, low fat or whole milk

Instructions

  • Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  • Mix the almond flour, sweetener and Greek yogurt in a medium bowl until a thick dough forms. If your mixture seems too wet you can add a little more almond flour.
  • Use a 1.5 tablespoon cookie scoop to scoop dough and roll them into balls. Place the donut holes on the prepared baking sheet, spacing them about 1 inch apart.
  • Bake for 20-30 minutes, or until the tops are golden. The balls should also feel slightly firm and should not fall apart if you apply light pressure to the surface.
  • Let donuts fully cool before adding any optional glaze. Donuts are best consumed within a few hours after they are cooked. They will become more firm and less soft if they are left out too long. Store uneaten donuts in the fridge or freezer. You can reheat them to get them soft and chewy again.

Notes

  • Sweetener note: These donuts work best with a monkfruit erythritol blend. Avoid using allulose or a sweetener blend with allulose because it will cause the donuts to be too moist and to brown too quickly.

  • Optional glaze:
    • 1/2 cup powdered sweetener (I used Lakanto powdered monkfruit with erythritol (Amazon | Target | Walmart)*
    • 2-4 tbsp water, milk or milk alternative
    • In a small bowl, whisk together powdered sweetener and liquid of choice until smooth. Start with 1 tbsp and add more as needed until it reaches your desired consistency. Using milk or a milk alternative will give you a more rich glaze.
