This low carb, high protein and keto-friendly carnivore bread is soft and very flavorful. It is easy to make and can be enjoyed on its own or used for making small sandwiches.

This popular and viral chicken carnivore bread is so flavorful. I don’t usually make carnivore recipes but I was very intrigued by this one and had to try it out. Unlike many other carnivore bread recipes, it doesn’t require a dozen eggs so the bread is not eggy. Instead, it uses chicken. This may seem unusual but it really works and makes the bread very tasty and high in protein.

Ingredients

  • Ground chicken
  • Eggs
  • Baking Powder
  • Parmesan Cheese

Ground chicken: I used regular ground chicken and not ground chicken breast which has less flavor and fat and may make your bread taste a little bland or dry.

Eggs: Eggs are used to give the bread structure.

Baking powder: Make sure to use aluminum free baking powder because the bread does use a large amount of baking powder. The baking powder helps the bread rise.

Parmesan cheese: Parmesan cheese is added to give the bread flavor and help it bind.

What is Carnivore Bread

Carnivore bread is a bread made out of animal products. It is usually associated with the carnivore diet but this bread is also low carb. Many carnivore breads are heavily egg-based and some use up to a dozen eggs in one loaf. This recipe uses chicken as the main ingredient. Yes, your bread will taste like chicken, but it actually works. The chicken adds flavor to the bread and but you still feel like you are eating a bread and not just ground-up chicken.

How to Make Carnivore Bread

  • The ground chicken is first sauteed until fully cooked.
  • The chicken, eggs, baking powder and cheese are then added to a food processor and processed until everything is evenly combined and the eggs have been fully incorporated with no streaks of egg remaining. It’s okay if the batter is not completely smooth and still has very small lumps of chicken.
  • Pour the batter into your prepared loaf pan and put your bread into the oven to bake. It will need about an hour in the oven.

Texture

The bread has a soft and moist texture. It will not have a texture like classic bread made with flour but it does have a bread-like feel to it. It is sturdy enough to use as bread for sandwiches or it can be enjoyed on its own. I found it flavorful enough to just eat it by itself.

This chicken carnivore bread is surprisingly soft, light and flavorful. It is just 4 ingredients and so easy to make. It is also low carb and keto-friendly.

Ingredients

  • 1 lb (454 g) ground chicken
  • 5 large (258 g) eggs
  • 1 tbsp (11.9 g) aluminum-free baking powder
  • 2/3 cup (69 g) shredded parmesan cheese

Instructions

  • Preheat oven to 350°F (177°C). Line an 8 x 4 inch baking loaf pan with parchment paper.
  • Bring a nonstick skillet to medium heat. Add ground chicken, stirring and breaking it apart with a cooking spatula as it cooks. Keep cooking chicken until it is fully cooked.
  • Transfer cooked chicken to a food processor. Add remaining ingredients to the food processor. Pulse on high until the ingredients are fully combined and no egg streaks remain. It's okay if the chicken is not fully smooth and leaves very small lumps in the batter. See photo in post for reference.
  • Pour bread batter into prepared loaf pan. Bake for about 1 hour or until surface is golden brown and bread is fully cooked. Let bread cool before cutting and serving.

Notes

  • I used regular ground chicken and not ground chicken breast. I think using ground chicken breast could make the bread dry and have less flavor.
  • I did not add any oil to my pan before cooking the chicken. I used the natural fat released from the chicken to help cook the chicken and I used a nonstick pan.
  • I chose parmesan cheese because it has a strong flavor and adds more flavor to the bread. You could use another cheese but your bread may have less flavor.
  • I recommend using aluminum-free baking powder to ensure there is no metallic aftertaste.
  • The bread does not rise that high during baking. So if you are making this bread to make sandwiches, know that they will be small sandwiches.
